Foodie Friday - Tomato Orzo

Tomato Orzo is my carb loading recipe. I usually eat this the night before a race. I am giving you the recipe for the rice, you can top it with steamed shrimp or grilled chicken. Both taste great.

Tomato Orzo - serves 6
2 cups of orzo rice
32 oz of water
2 tablespoons of tomato paste
3 small pearled onions
1 chicken bouillon cube (optional)
1 tablespoon of extra virgin olive oil
salt
pepper

1. In a medium size pot bring to boil water, tomato paste, peeled and sliced pearled onions, and one bouillon chicken cube.


2. Once water comes to a boil, pour in orzo and olive oil, then cover.

3. Stir orzo a few times so it doesn't stick. Keep covered until rice begins to become tender.

4. Once orzo is tender remove lid and lower heat to a simmer. Sprinkle in salt and pepper to taste. Let the orzo simmer until water is gone.

5. Top with choice of meat and serve!
